If I am being honest, I had no idea what a bespoke cocktail was the first time that I met the renowned mixologist Zachary Blair. I usually drink beer or bourbon, straight. However, despite my shortcomings, I had heard of the head bartender of the Kanu Lounge at the Whiteface Lodge who has made quite a name for himself in the cocktail world with his creative cocktail concoctions. Bespoke, or made to order, means that there is no standard cocktail to speak of on the menu at Kanu. Zach simply asks you a few questions and then magically stirs (or shakes) up the ideal cocktail for your specific palate. How does he do this to perfection each and every time especially when the après ski crowd is jamming?
