There I was, 8:30 in the morning and already standing in thigh deep water in the middle of the Provo River. Chest high waders on casting a line like Brad Pitt in A River Runs Through it, or at least that's what I thought I looked like. My guide from JANS probably thought otherwise while watching me from the bank with a "where did they find this guy" kind of look. Then it happened. Not one, not two, but three trout...hooked by yours truly. They say there is something called beginner's luck. Maybe, but lucky or not, I think good old Paul Maclean would be proud of me. Either way, those three fish officially kicked off my hunt for the best summer après spots in Park City, because nothing makes a cold drink taste better than earning it in the river first.

The clean pours, the crafty cocktails are legitimately worth your attention.

For this night, the attention shifted away from the saloon patio, to Main Street where they had set up their Spirit Garden. And, the pour? I got my hands on the Prisoner's Share 2026, a high west distillery limited release blend of straight bourbon and rye finished in red wine barrels from The Prisoner Wine Company. Released just weeks ago in limited quantities, it's the kind of whiskey that tastes like the number of fish you caught that morning on the river just went from three to six. 

The Main Event: Riverhorse on Main x Piattelli Vineyards

A brief walk up Main Street and the stage for Riverhorse on Main Savor the Summit emerged. Two long tables bent their way through their section of Main like Messi bends the ball into the back of the net for yet another World Cup goal. A perfect analogy for this one night collaboration with Piattelli Vineyards that somehow transformed dinner in the Wasatch into Argentina for one night. The menu took your taste buds on a tour from the coast to mountain — seafood to open, then Rocky Mountain venison and buffalo working toward the finish. Each course was anchored by a wine poured from vineyards sitting at some of the highest elevations on the planet.

While all of the wines went down easy, probably a little too easy, the pour that had the table wanting more was the Cab Five. Piatelli's flagship red blend, never before available in Utah, was bold, dark and feeling just at home in the altitude of Park City. The food and wine pairing was nothing short of outstanding and the energy was contagious. 

Live music, string lights, summer sky casting shadows in the alpine light. It's the kind of night that makes Park City feel less like a resort town and more like a real place. There's a difference, and not every mountain town manages it.

Why Park City Perfects the Summer Après Philosophy

Park City isn't the place where you choose between the river and the table, the trail and the bar or the mountain and the cocktail garden. It's a town where you stack the adventure with the après no matter what the season. You go back to back to back until the sun finally dips below the Wasatch. Three trout in the morning, Prisoner's Share at golden hour, Argentinian wine under the stars. That's not a vacation itinerary. That's just a very good Saturday.

Riverhorse is keeping a selection of Piattelli wines on their regular list through July 4, including the Rosé of Malbec and the Reserve Malbec and Tannat.
